Veggie Lentil Chilli
An easy, wholesome veggie dish. The cocoa powder adds a lovely richness too. Leave to cook slowly and serve with rice, couscous or quinoa!
Ingredients
3 cloves of garlic crushed
1 onion
2 tsp cumin
1 tsp paprika
1 tsp cinnamon
1 tsp cocoa powder
1 carrot
1 stick of celery
2 tsp tomato puree
1 tin green or brown lentils
1 tin kidney beans in chilli sauce
1 tin plum tomatoes
1 tsp soy sauce
Fresh coriander
Method
Cook the finely chopped cubes of carrot, celery, onion and garlic in a large pan with a couple of glugs of olive oil
Cook for 5-10 mins until softened
Add the spices and stir for another 5 mins
Add the tomato puree and soy sauce coating the vegetables well.
Add the tinned tomatoes, beans and lentils.
Mix the cocoa with some hot water and stir into mixture with a handful of chopped coriander stalks.
Season with salt and pepper and add the fresh coriander leaves towards the end.
Cook at a medium heat so that it bubbles away for at least 30 minutes.
