Vegan Plum Cake

Vegan Plum and Orange Cake

Easy, vegan recipe! You can also try this with other fruits like pears, peaches and pineapple. I really like using plums - they have a touch of sharpness and work really well with orange zest.

Ingredients

  • 6-7 plums, halved (remove the seeds)

  • 65g vegan butter

  • 65g caster sugar

  • 120ml non-dairy milk (soy milk works best)

  • 1 teaspoon vanilla extract

  • Zest of one orange

  • 130g plain flour

  • 3 tsp baking powder

  • 1tsp cinnamon

  • Generous squeeze of treacle or maple syrup

Method

  1. Heat oven to 190C/fan 170C/gas 5. Butter one 20cm sandwich tin and line with non-stick baking paper.

  2. In a large bowl, mix the butter and sugar and add the orange zest, vanilla and cinnamon- this should be a light and creamy mixture

  3. Add the sieved flour and baking powder

  4. Stir in the milk thoroughly

  5. Pour the cake mixture into the tin and evenly spread the mixture

  6. Arrange the halved plums on the top and drizzle in some treacle (about 1tbsp)

  7. Bake for around 30-35 mins until golden

  8. Leave to cool in the tin and turn out upside down

  9. Sprinkle in icing sugar and eat, eat, eat!
