Vegan Orange Loaf

The beauty of loaf cakes is that they're unfussy. Throw the mixture in, leave to cool and cover in a delicious icing. I love using citrus flavours in my baking, this works perfectly served with a dollop of yoghurt as a desert or on its own as a snack!

Ingredients

  • Zest or 2 oranges

  • 120ml juice of an orange

  • 265g plain flour

  • 1tsp baking powder

  • 1tsp bicarbonate of soda

  • Pinch of salt

  • 70g soft brown sugar

  • 65g caster sugar

  • 120ml sunflower oil

  • 180ml hot water

  • Squeeze of honey (optional)

  • 1tsp vanilla extract (optional)

For the icing:

  • 3 heaped tablespoons of icing sugar

  • Additional orange zest

Method

  1. Pre-heat the oven to 180C and prepare a loaf pan with greaseproof paper

  2. In a bowl, mix the flour, zest, baking powder, bicarbonate of soda and salt together

  3. In a separate bowl, stir together the sugars, orange juice, water and oil

  4. Add the dry ingredients to the wet and stir gentry until well mixed

  5. This should form a fairly wet mixture. Add the optional honey and vanilla

  6. Cook in the oven for about 35-40 mins. Check after 10 mins, if it is browning too quickly then cover it in foil for the remaining time

  7. Leave to cool in the tin for a couple on minutes and then turn out onto a cooling rack

  8. To make the icing, stir 3 heaped tablespoons of icing sugar with a splash of water and some orange zest

  9. Drizzle over the cake once it is completely cooled
