Tarka Dhal
Tarka dahl is perfect for when you're cooking on a budget and want something wholesome and delicious. Vegan and full of flavour. I usually serve it with rice and mango chutney and plenty of fresh coriander. You can be quite flexible with the recipe too, I often add extra vegetables if I have them in the cupboard such as peppers and courgettes.
Ingredients
350g red split lentils
3 tsp turmeric
Couple of knobs of butter
2 tbsp olive oil
3 tsp ground cumin
1 tsp ground coriander
1 tsp garam masala
1 red onion, chopped
4 bulbs of garlic, chopped
Thumb size piece of ginger, grated
Handful of cherry tomatoes
1 fresh green chilli (optional extra if you like spice)
Method
Add the lentils to a pan, fill with cold water- about 2 inches above the surface of the lentils
Bring to a boil and stir regularly for about 10 minutes
Skim off any scum during the 10 minute boil
Stir in the butter and turmeric and bring to a low heat- add salt and pepper to taste, keep cooking for another 15-20 mins
Add more water if necessary, the lentils should be a creamy porridge like consistency
In a separate frying pan, cook the onions, garlic and ginger in the oil- browning slowly
Add the spices and tomatoes and cook slowly for a good 10-15 mins until everything is coated in the lovely spices
Add the fried ingredients to the lentils, stirring
Add a generous handful of coriander
Serve with rice and mango chutney!
