Easy Tarka Dhal

Tarka Dhal

Tarka dahl is perfect for when you're cooking on a budget and want something wholesome and delicious. Vegan and full of flavour. I usually serve it with rice and mango chutney and plenty of fresh coriander. You can be quite flexible with the recipe too, I often add extra vegetables if I have them in the cupboard such as peppers and courgettes.

Ingredients

  • 350g red split lentils

  • 3 tsp turmeric

  • Couple of knobs of butter

  • 2 tbsp olive oil

  • 3 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp garam masala

  • 1 red onion, chopped

  • 4 bulbs of garlic, chopped

  • Thumb size piece of ginger, grated

  • Handful of cherry tomatoes

  • 1 fresh green chilli (optional extra if you like spice)

Method

  1. Add the lentils to a pan, fill with cold water- about 2 inches above the surface of the lentils

  2. Bring to a boil and stir regularly for about 10 minutes

  3. Skim off any scum during the 10 minute boil

  4. Stir in the butter and turmeric and bring to a low heat- add salt and pepper to taste, keep cooking for another 15-20 mins

  5. Add more water if necessary, the lentils should be a creamy porridge like consistency

  6. In a separate frying pan, cook the onions, garlic and ginger in the oil- browning slowly

  7. Add the spices and tomatoes and cook slowly for a good 10-15 mins until everything is coated in the lovely spices

  8. Add the fried ingredients to the lentils, stirring

  9. Add a generous handful of coriander

  10. Serve with rice and mango chutney!
