Lemon Shortbreads

Super easy, 4 ingredient recipe. I love using lemon in baking, it adds a lovely touch of zest! Decorate as you wish, I have used lavender, lemon zest and crushed walnuts. For a twist, you can also decorate with crystallised ginger!

Ingredients

  • 100g unsalted butter (softened)

  • 50g golden caster sugar

  • 175g plain flour

  • Zest of a large lemon and 1tbsp juice

Method

  1. Stir the butter so that it softly whipped

  2. Mix in the sugar

  3. Add the lemon zest and juice (I also like to add a tsp if ginger syrup as an optional extra)

  4. Add the flour and mix together with your hands to form a dough

  5. Lightly flour a work surface and roll out the mixture

  6. Roll to a bit less than 1cm thick and cut into small circles

  7. Cook at 150C on a lined baking tin for around 13-15 mins until slightly golden at the edges

  8. Cool completely on a cooling rack and decorate as you wish!
