Lavender Shortbread

Lavender Shortbreads

One of my favourite last-minute shortbread recipes! Very simple and such a unique flavour. Perfect with endless cups of tea.

Ingredients

  • 160g plain flour

  • 100g soft, unsalted butter

  • 75g caster sugar

  • 2 tsp dried lavender

  • 1 tsp vanilla extract

  • 1 free range egg yolk

Method

  1. Preheat the oven at 170c and line the baking trays.

  2. Blitz all the ingredients (flour, butter, sugar, lavender and vanilla) together in a food processor or by hand to create breadcrumbs.

  3. Add the egg yolk (no white).

  4. Turn out onto a clean, lightly floured surface and roll out 1cm thick.

  5. Cut out the biscuit pieces and place onto a lined baking tray.

  6. Bake for 7-10 minutes or until lightly golden!

  7. Cool on a cooling rack for 10 minutes and serve.
