Ginger & Cinnamon Flapjack

Ginger and Cinnamon Flapjacks

My mum used to always make flapjack so I have been obsessed from an early age. The ginger adds a lovely warm, Christmassy flavour and the recipe is so simple. You can add any extras like chocolate, fruit and nuts too. Sprinkle them with icing sugar to serve!

Ingredients

  • 200 grams unsalted butter

  • 6 tablespoons golden syrup

  • 300 grams jumbo oats

  • 1 pinch of salt

  • 1 teaspoon cinnamon

  • 4 pieces of stem ginger (chopped)

  • 4 tablespoons stem ginger syrup

Method

  1. Butter and line a small 20cm x 20cm baking dish

  2. Preheat the oven 180C

  3. Melt and stir the butter and treacle in a pan on a low heat, slowly

  4. Pour the oats, salt and cinnamon in a big bowl

  5. Add the wet ingredients and the chopped ginger

  6. Stir well and add the ginger syrup

  7. Pour the mixture into the tin and even out

  8. Bake for around 20-25 minutes

  9. Leave to cool in the tin and place on a cooling rack

  10. Cut into squares, leave to cool completely before you remove from the tin

  11. Munch away with a cup of tea!
