Courgette and Caper Pasta
Super easy pasta dish. Garlic and capers work beautifully with courgette. No need to make a sauce, the olive and and garlic adds lovely flavour and the breadcrumb topping adds an interesting texture too with a touch of spice from the chilli.
Ingredients
1/2 a courgette
1tbsp capers
2 cloves garlic
1tsp chilli flakes
3 tbsp olive oil
Fresh parsley
Pasta bows
Breadcrumbs or 1 slice dried toast
Parmesan
(Serves 2)
Method
On a low heat, cook the grated or finely sliced courgette and chopped garlic in generous amount of oil.
Get the pasta boiling on a medium heat.
Whilst the pasta is cooking, in a small bowl, add 2tsp of grated Parmesan to the breadcrumbs along with a pinch of chilli flakes and salt and pepper.
Drain the pasta, keeping a splash of the water it was cooking in
Stir the pasta and a dash of the water into the courgette and garlic, adding a bit more oil and the capers (cooking on a low heat for a few minutes).
Stir in the chopped parsley
Plate up and top with the Parmesan breadcrumbs!
