Classic Vanilla Traybake
A simple and classic bake, perfect when you need a sweet fix with a cup of tea! Quick and easy to rustle up. This recipe makes a small batch for a 20cm x 20cm tin so feel free to double up the mix for a larger tray!
Makes 10-12 squares
Ingredients
Sponge:
140g self raising flour
2 large eggs
115g caster sugar
115g softened butter
2 tbsp milk
1 tsp vanilla essence
1 level tsp baking powder
Icing:
170g icing sugar
Sprinkles!
Method
Preheat the oven to 180c (Fan)
Line the baking tray with greaseproof paper
In a large bowl, mix the softened butter and sugar until it forms a smooth mix
Add the remaining sponge ingredients and mix until everything is well blended
Pour into the baking tray, spreading evenly and cook in the oven for around 30 minutes- check with a sharp knife and make sure it comes out dry
Leave the cake cool for 5 minutes in the tray then turn out onto a cooling rack and leave to cool completely. For a really flat top to the cake, turn it out so that the cake is bottom side up
Make the icing by mixing the icing sugar with a splash of water and stirring thoroughly
Once cooled, pour the icing over the cake and cover in sprinkles
Leave to set in a cool place for a good 15 minutes and then slice into squares!
