Banana and Oat Muffins

An unfussy muffin recipe, perfect for using ripe bananas. The oats add a lovely texture and the cinnamon and nutmeg add a gentle spice!

Makes 12-14 muffins

Ingredients

  • 220g self raising flour

  • 80g porridge oats

  • 80g light brown sugar

  • 70g caster sugar

  • 1 tsp ground cinnamon

  • 1/2 tsp nutmeg

  • 1 tbsp honey

  • 2 ripe bananas (mashed)

  • 110 ml milk

  • 1 egg

  • 3 tbsp oil

  • Pinch of salt

Method

  1. Preheat the oven to 180c

  2. In a large bowl, mix the flour, sugar, salt, oats and spices

  3. In a separate bowl, whisk the wet ingredients together

  4. Mix the wet ingredients into the dry gradually until a wet mix is formed

  5. Grease the muffin tray and distribute mixture evenly across the tray

  6. Sprinkle the muffins in oats and some brown sugar (optional) before placing them into the oven

  7. Bake for around 15 mins, until the knife comes out clean

  8. Leave to cool in the tray for a couple of minutes and then put them out on a cooling rack!
