American Pancakes

American pancakes are my favourite treat breakfast! You can get creative with the toppings, I also love adding chopped figs, cinnamon and yoghurt for a change.

Ingredients

  • 140g/4¾oz plain flour

  • 1 tsp baking powder

  • ½ tsp salt

  • 2 tbsp caster sugar

  • 130ml/4½fl oz milk

  • 1 large egg, lightly beaten

  • 2 tbsp melted butter

Method

  1. Sieve the flour, baking powder, sugar and salt in a large bowl.

  2. In a separate bowl, whisk the egg, milk and the cooled melted butter.

  3. Whisk the wet ingredients into the dry for less than a minute.

  4. Heat a frying pan with a generous knob of butter, on a medium heat.

  5. Fry tablespoon size blobs of mixture for 2-3 mins then flip until golden.

  6. Stack ‘em up! Serve with syrup, berries and jam!
