American Pancakes
American pancakes are my favourite treat breakfast! You can get creative with the toppings, I also love adding chopped figs, cinnamon and yoghurt for a change.
Ingredients
140g/4¾oz plain flour
1 tsp baking powder
½ tsp salt
2 tbsp caster sugar
130ml/4½fl oz milk
1 large egg, lightly beaten
2 tbsp melted butter
Method
Sieve the flour, baking powder, sugar and salt in a large bowl.
In a separate bowl, whisk the egg, milk and the cooled melted butter.
Whisk the wet ingredients into the dry for less than a minute.
Heat a frying pan with a generous knob of butter, on a medium heat.
Fry tablespoon size blobs of mixture for 2-3 mins then flip until golden.
Stack ‘em up! Serve with syrup, berries and jam!
